The farmer in town suggested that I go out into the garden at 10:30 PM with a flashlight and see what's there... so, I did!  He was right, there were many bugs on the leaves at that time... Here's what's eating the leaves, a beetle of some sort:

The farmer in town told me to use a type of "dust" on the leaves that this bug is eating (eg. sunflower leaves, cabbage, bean plants).
